ABOUT THIS COFFEE AND PRODUCER

This coffee is an orange bourbon varietal, that was washed and then underwent two rounds of anaerobic fermentation, inoculated with a special strain of lager yeast. The coffee underwent a first anaerobic fermentation of 52 hours, then was pulped, and then fermented for another 42 hours.

This coffee is from the Cauca region of Colombia, produced by Wilton Benitez of Granja Paraíso 92. This lot was grown on La Macarena, one of Granja Paraíso 92’s member farms. Oscar and Wilton work together as part of Granja Paraíso 92 — one of Colombia’s leading coffee producers in innovative processing techniques. With their microbiology lab, quality lab, and processing plant, Granja Paraíso 92 is able to implement carefully controlled processing techniques that result in coffees that are delicious, vibrant, and one-of-a-kind.

We selected this coffee to introduce the latest offering from Granja Paraíso 92 for its distinct rose florals, paired with a creamy orange sweetness. It’s sweetness has notably been kicked up a notch and with the increased body it is one of our current favorites from Wiltons offerings.
