ABOUT THIS COFFEE

This is “wave” natural-processed coffee is a Sidra variety from Ecuador. The “wave” refers to the temperature wave, fluctuating between higher temperature to lower temperature, utilizing fermentation tanks and refrigerators, in a sustained way that keeps the embryo alive.

This coffee is produced by Jose Ignacio “Pepe” Jijon of Finca Soledad in Intag valley, Imbabura, Ecuador. He was a mountaineer before finding success as an incredible coffee producer. His approach to his coffees is built on his love and passion for the land, and is evident in the impeccable coffees he produces.

WHY WE SELECTED THIS COFFEE

We’ve long admired Jose’s (Pepe) coffees, and were ecstatic at the opportunity to collaborate with our friend Hydrangea Coffee Roasters on a release. We worked with Hydrangea to select the Sidra Wave Natural (Moonwake) and Wave Washed (Hydrangea), as a great showcase of Pepe’s incredible care and expertise in cultivating and processing beautiful coffees - especially the same varietal. The Sidra Wave Natural has delightful aromas of yellow florals, followed by creamy peach, and final balance of tartness and sweetness reminiscent of lemon meringue.
